Mexican Caprese



This dish has become my favorite lunch lately.Fresh tomatoes and basil from the garden and creamy avocado.Can't beat that!

Recipe

1 ripe Avocado
1 Tomato
A handful of basil leaves
1 tbsp balsamic vinegar
Salt and pepper

Remove the pit and skin from the avocado and cut into slices
Cut tomato into slices
Arrange avocado and tomato on a plate in an avocado-tomato pattern.
Put basil over the caprese
Top with balsamic vinegar and season with salt and pepper

Sugar for my honey and my money..


As you might recognize I changed my blog name into SWEET HEALTHY LIFE.
Why?I think life is sweet as cookies and cakes..but we all have to stay healthy to enjoy it
I love desserts,especially healthy raw vegan desserts.I have always been a sugar addict,no not fries,not burgers...sweet sugary yummy bad for you things like donuts,cakes,pies and of course chocolate.I could eat chocolate all day and night,if there would be a chocolate shower I would be the first one jumping into it every morning.And of course I would take a chocolate bath at night!!
But guess what white sugar is bad for you,there is nothing about it, that makes your life sweeter,it makes you sick,obese,it gives you bad teeth and it even ages you.But not all sugars are created equal,there are some great healthy alternatives out there,which even have some health benefits to it.

My favorite natural sweetener is DATES and DATE SYRUP.I use them in all of my raw desserts,if I need to add a liquid sweetener I blend a cup of dates with 2 cups of water and make date syrup.It is one of the most natural sweeteners you can get.Dates are one of the best natural sources of potassium. Potassium is an essential mineral your body needs to maintain muscle contractions including the vital heart muscle. Potassium is needed to maintain a healthy nervous system and to balance the body’s metabolism as well. Dates also contain a variety of B-complex vitamins – thiamin, riboflavin, niacin, vitamin B-6 and pantothenic acid. These vitamins have a variety of functions that help maintain a healthy body – to metabolize carbohydrates and maintain blood glucose levels, fatty acids for energy, and they help make hemoglobin, the red and white blood cells. Dates also contain Magnesium which is essential for healthy bone development and for energy metabolism and Iron which is essential to red blood cell production. Red blood cells carry all the nutrients to cells throughout the body.

COCONUT NECTAR
Coconut nectar ingredients include an abundant source of minerals, 17 amino acids, Vitamin C, B Vitamins, naturally contains a prebiotic and it has a nearly neutral pH. Raw coconut sap is grown without chemicals, pesticides or herbicides and the process does not require heating and extensive processing as do other syrups such as maple and agave.

The lightest and mildest syrups, which are generally harvested at the beginning of the season, are called "fancy grade A" or sometimes "grade A light amber"; At the middle of the spectrum are "grade A medium amber" and "grade A dark amber."
Finally, there's "grade B", the dark, thick syrup that packs a strong maple punch with caramel undertones. 
Just make sure you buy the real thing, pure organic maple syrup and nothing else.


 


Then there is AGAVE

I know that agave is very popular and common in desserts that are called healthy.The problem with agave is that it is processed at high temperatures.The process by which agave glucose and inulin are converted into ''nectar'' is similar to the process by which corn starch is converted into HIGH FRUCTOSE CORN SYRUP.That is all I need to know!!

Think-use your big fat brain


I just finished this book ''Think'' written by Lisa Bloom.And wow did it get to me!!!
Lisa Bloom is an award winning journalist,legal analyst and she got my attention when she was featured in the last issue of Veg News.That she is Vegan is just another detail...
''Think'' makes you think about yourself and the world we live in.That we are watching,listening and reading about celebrities,reality show,plastic surgeries and many other BS that doesn't make us smarter but just fries our brain.

She gives a great example about Angelina Jolie and all the UNHCR ( the UN Refugee Agency ) work she does.In the media we hardly here about it...what we do hear are things like: Is Angelina pregnant? Getting married to Brad Pitt? Got a boob job? To skinny?...and it goes on and on.
It is pretty sad that such a famous celebrity, who has such a big influence on people and who does great things in this world doesn't get the right attention she deserves...who cares if she marries Brad Pitt...we should care that she just donated 1 million dollars to build a school so people in North Africa or the Middle East can learn how to read and write.

Everybody knows about the Kardashians, The Bachelor, Jersey Shore,Big Brother but nobody knows what is going on in the world we live in or even the country we live in.Nobody knows hardly anything about our government or the war situation..everybody has their opinion about it but lets be honest who really takes the time and afford and does the research so they can have their own opinion.We just believe what the news tell us and sometimes what our friends and families say without even thinking twice about it.Did you know that the USA is currently engaged in  9 wars? (Iran, Egypt, Syria, Mexico, North Korea, Japan, China, Russia, Morocco).
No!!!Me either...How crazy is that...We have no clue...

Did you know if you would donate 20 Dollars a girl in India could go to school for a year?If you donate 100 Dollars she would have a school education and would be able to find a job to maybe even become a doctor to save other peoples lives just because you skipped to buy a pair of shoes or didn't went out for dinner one time.I think that really rocks..
Did you know that we still have slavery in this world...right now 3 million young girls are victims of trafficking.They get kidnapped,raped,drugged and are forced to prostitution without ever having the freedom to do anything by themselves....yes we still live in a sick world!!
We should be so thankful every single second of our lives that we are born in this kind of world...that we were the lucky ones-being able to do whatever,whenever  we want to-never being forced into anything.Being able to get an eduction,having human rights and a health care system..those are things we take for granted every day just because God decided to put us on this side of the world.
I am not trying to preach anything!!!I just really believe that we have to start thinking for ourselves,to do our own research on important big things.
The environment -cause if we keep on treating the earth the way we do, soon it will fight back and things like hurricane Katrina were probably just the beginning.
The way we treat our bodies and our health-do we really want to keep on feeding us medications and getting surgery because we can't get our sh.... together and think about what we eat..garbage in garbage out!!!Eat plants and you will thrive,eat animals and you will die!!
People that are not born into the luxuries we have-lets skip the next shopping trip and do some research on how to spend that money wisely.How we can really change a life!?
Let's get smart about what is going on in our country-war,government,environment,health care and everything else that you think will make you smarter.

Build your own opinion, do the research and don't let anybody tell you what is wrong or right unless they really know what they are talking about.You don't have to agree with anybody,be your own smart person!!Read read read and be healthy and happy...

Nectarine Upside Down Cake

I love the fresh juicy nectarines from the farmers market right now...season is almost over so I use them in everything...I am happy to be able to go the market every Saturday morning now and it is only a 15minutes walk from our new home..so here is a recipe for raw nectarine upside down cake!!!

Ingredients:

4 cups sliced nectarines ( you could also use peaches of course)
3 cups almonds
2 cups dates
1/2 cup unsweetened coconut
2tbsp maple syrup,date syrup or coconut nectar



Slice nectarines,transfer into bowl and add maple syrup.Mix and set aside.
Process the nuts and dates in a food processor into a crumbly-sticky mixture.
Transfer to a mixing bowl and add coconut.Mix thoroughly.
Empty half of the nectarine mixture into a spring pan.
Empty half the almond crumble mixture on top of the fruit.
Firmly press the crumble crust down.
Repeat with the other half of the nectarines and the crust.
Set in fridge for at least 30 min.
Sprinkle coconut on top and serve with fresh sliced fruit,coconut whipped cream or even coconut ice cream.

Five miracle foods-who needs medicine?!

1- Dark leafy greens



Dark green leafy vegetables are good sources of many vitamins (like vitamins A, C, and K and folate) and minerals (such as iron and calcium). They are also great sources of fiber. Research suggests that the nutrients found in dark green vegetables may prevent certain types of cancers and promote heart health.

Arugula has a peppery taste and is rich in vitamins A, C, and calcium. Arugula can be eaten raw in salads or add a little to your smoothie..a little goes a long way.

Broccoli has both soft florets and crunchy stalks, and is rich in vitamins A, C, and K, folate, and fiber.

Collard Greens have a mild flavor and are rich in vitamins A, C and K, folate, fiber, and calcium. The best way to prepare them is to boil them briefly and then add to a soup or stir-fry.

Dandelion Greens have a bitter, tangy flavor and are rich in vitamin A and calcium.

Kale has a slightly bitter, cabbage-like flavor and is rich in vitamins A, C and K.

Mustard Greens have a peppery or spicy flavor and are rich in vitamins A, C, and K, folate, and calcium. Make sure you cook them well..I tried to put them into my green smoothie once and that did not turn out that well..lesson learned.

Romaine Lettuce is a nutrient-rich lettuce that is high is vitamins A, C, and K, and folate.

Spinach has a sweet flavor and is rich in vitamins A and K, folate, and iron.

Swiss Chard tastes similar to spinach and is rich in vitamins A, C, and K, potassium, and iron.





2- Berries



One cup of strawberries contains over 100 mg of vitamin C, almost as much as a cup of orange juice. We need vitamin C for immune system function and for strong connective tissue. Strawberries also add a bit of calcium, magnesium, folate and potassium.
One cup of blueberries offers a smaller amount of vitamin C, minerals and phytochemicals as does one cup of raspberries.
You can choose other berries with similar nutrition, such as loganberries, currants, gooseberries, loganberries and bilberries.
The pigments that give berries their beautiful blue and red hues are also good for your health. Berries contain phytochemicals and flavonoids that may help to prevent some forms of cancer. Cranberries and blueberries contain a substance that may prevent bladder infections. Eating a diet rich in blackberries, blueberries, raspberries, cranberries and strawberries may help to reduce your risk of several types of cancers. Blueberries and raspberries also contain lutein, which is important for healthy vision.

Oh I just love avocado..I could eat it all day,every day...in my salad..on raw crackers..make chocolate mousse out of it or just eat it plain with a little bit of salt..Avocado contains the good fat- so no it won't make you fat.

Avocados have been shown to inhibit the growth of prostate cancer.

Oral Cancer Defense
Research has shown that certain compounds in avocados are able to seek out pre-cancerous and cancerous oral cancer cells and destroy them without harming healthy cells.

Avocado, like olive oil, is high in oleic acid, which has been shown to prevent breast cancer in numerous studies.
 
Eye Health
Avocados have more of the carotenoid lutein than any other commonly consumed fruit. Lutein protects against macular degeneration and cataracts, two disabling age-related eye diseases.

Lower Cholesterol
Avocados are high in beta-sitosterol, a compound that has been shown to lower cholesterol levels. In one study, 45 volunteers experienced an average drop in cholesterol of 17% after eating avocados for only one week.

5- Lemons and Limes



Lemons and limes are an excellent source of vitamin C, one of the most important antioxidants in nature. Vitamin C is one of the main antioxidants found in food and the primary water-soluble antioxidant in the body. Vitamin C travels through the body neutralizing any free radicals with which it comes into contact in the aqueous environments in the body both inside and outside cells. Free radicals can interact with the healthy cells of the body, damaging them and their membranes, and also cause a lot of inflammation, or painful swelling, in the body. This is one of the reasons that vitamin C has been shown to be helpful for reducing some of the symptoms of osteoarthritis and rheumatoid arthritis.
Since free radicals can damage blood vessels and can change cholesterol to make it more likely to build up in artery walls, vitamin C can be helpful for preventing the development and progression of atherosclerosis and diabetic heart disease.
Vitamin C is also vital to the function of a strong immune system. The immune system's main goal is to protect you from illness, so a little extra vitamin C may be useful in conditions like colds, flu's, and recurrent ear infections.
Owing to the multitude of vitamin C's health benefits, it is not surprising that research has shown that consumption of vegetables and fruits high in this nutrient is associated with a reduced risk of death from all causes including heart disease, stroke and cancer.
